Domi's Italian pasta salad
Recipe for 4 people
|500 g||Pasta, e.g. Fussilini or Farfalle|
|300 g||Sun-dried tomatoes in oil|
|200 g||Artichoke hearts|
|8 El||Extra virgin olive oil|
|6 El||Balsamic vinegar|
|Sea salt and pepper, freshly ground|
|150 g||Parma ham|
|50 g||Pine nuts|
Cook the pasta al dente according to the instructions on the packet and set aside to cool.
Clean and wash the rocket and cut into strips.
Cut the dried tomatoes, mozzarella, artichoke hearts and Parma ham into bite-sized pieces.
Mix the olive oil, balsamic vinegar, pepper and salt well and place in a salad bowl.
Toast the pine nuts in a coated pan (without oil).
Add the cooled pasta, tomatoes, mozzarella and artichoke hearts to the dressing and mix well.
Arrange the salad on a plate and garnish with rocket, ham, pine nuts and Parmesan.
Tip: You can replace some of the olive oil with the oil from the dried tomatoes.
