Truffled mashed potatoes
Recipe for 4 people
|800 g||floury potatoes|
|50 g||Truffle butter with summer truffles|
|1 – 2||Summer truffles from the glass|
|Truffle oil based on the best extra virgin olive oil|
Peel the potatoes, dice them coarsely and boil them until soft, then press them through the potato press.
Add butter, milk and cream and stir in. Season the puree with salt, white pepper, cayenne pepper and nutmeg.
Cut the truffles from the glas into ganz fine strips and mix them under the mashed potatoes.
Season with truffle oil … ready.
